A delicious Healthy Brussels Sprouts Salad – with almond slices, crisp tart apple and sweet cranberries. Perfect on its own as a meal or as a side dish for your main.
300g (10.5oz) of brussels sprouts, shredded
1 large crisp apple (I used honey crisp), cored halved and sliced thinly
1/2 red onion, sliced thinly
40g (1.5oz) of dried cranberries
2 tbs of sliced almonds
FOR THE DRESSING:
1/2 cup of plain fat free yoghurt
2 tbs of low fat mayonnaise
1 tsp of dijon mustard
1 tsp of poppy seeds
1/2 tsp of onion powder
juice of half a lemon
pinch of salt
1 tbs of sukrin: 1 (or use another sweetener of choice)
Add all the ingredients for the salad to a large salad bowl
Whisk the ingredients for the dressing together in a small bowl.
Pour over the salad and toss well to coat.
Serve and enjoy!!
