1 avocado peeled and pit removed
1/2 cup cooked chickpeas
1/4 teaspoon kosher salt
1 teaspoon lemon juice
4 slices whole grain bread toasted
3 tablespoons fresh cilantro roughly chopped
In a small bowl, combine the avocado and chickpeas. Mash together, leaving a few lumps. Stir in the salt and lemon juice
Spread the avocado mixture on the toasted bread. Top with fresh cilantro and serve.
