Easy French Toast Waffles – if you love both French Toast and Waffles then this is the recipe for you. Perfect for breakfast or dessert.


2 low calories slices of wholemeal bread (60g/2oz) (1 HEb)

2 eggs

6 tbs of fat-free? plain yoghurt

pinch of cinnamon

1/2 tsp of vanilla extract

1/2 tbs of sukrin gold (or another granulated sweetener of choice)

coconut oil spray





In a bowl whisk together eggs, yoghurt, sweetener, vanilla and cinnamon.

Place bread in a shallow dish and pour mixture over the top.

Turn each slice of bread so that it gets coated well in the mixture.

Set aside for approx 5 minutes, for it to soak up all the mix.

Heat waffle iron to medium.

Spray waffle iron with coconut spray oil.

Add soaked bread slices and cook on waffle iron till golden all over.

Serve with your choice of sides.
