Chicken Leg Quarters are not only delicious, but they are also economical and easy to make when cooked in your Instant Pot.
Every time that we go to the grocery store, we are always shocked at how inexpensive chicken leg quarters are. You can get a lot of meat for very little cost per pound.
However, the only real way to get them to cook properly is by roasting them in the oven. And that unfortunately, takes a long time.
So instead, we began to grill our chicken leg quarters. Although the chicken has great flavor when cooked on the grill, it is very difficult to get the end result perfectly cooked.
Either the meat is undercooked in the center or the thinner portions are so dried out that they are difficult to chew.
So instead, we now use our Instant Pot to make Chicken Leg Quarters.
Now, when I said “the least amount of work possible”, there is one part of this recipe that takes a little work – browning the legs. You can skip this step, but I don’t recommend it. Browning makes the skin taste much better, the browned bits on the bottom of the pot make a rich sauce, and browning renders some of the fat in chicken legs
4 Chicken Leg Quarters
1 cup water
Seasoning or sauce of your choice
Place 1 cup of water in the liner of the Instant Pot
Add the trivet inside the pot.
Stack the chicken leg quarters in a bookshelf manner, placing the thickest part of the leg quarter resting on the trivet, with the leg facing upward towards the lid.
Lock the lid in place and move the valve to the SEALING position.
Pressure Cook/Manual on HIGH pressure for 20 minutes.
Once the cook time expires, allow for 8 minutes of Natural Pressure Release.
Release any remaining pressure and crisp using the crisper lid, on the grill or under the broiler.
Season as desired.
*It is best to let the chicken rest at room temperature 20 minutes prior to cooking to allow the Instant Pot to come to pressure quicker.
