INGREDIENTS:
160g (5.6oz) of plain flour
1 tsp of baking powder
½ tsp of baking soda
1 tsp of vanilla essence
180g (6.3oz) of ripe bananas
1 tbs of unsalted butter or coconut oil (melted)
2 tablespoons of maple syrup
30g of milk chocolate chips (or dairy free chocolate chips)
2 large eggs
INSTRUCTIONS:
Preheat oven to 180c or 350f (gas mark 4)
Sieve flour, baking powder and soda into a large bowl.
In a separate bowl mash the banana and then whisk in the melted butter (or coconut oil), maple syrup and vanilla essence and then gradually beat in the eggs.
Fold in the dry ingredients and chocolate chips
Line a loaf tin with some baking paper and pour in the mixture.
Bake in the oven for approx 40 mins, until a wooden skewer inserted in the centre, comes out clean.
Allow to cool and then slice and serve.
