Drool-worthy Pepperoni Pizza Egg Bites – these mini cheesy bites are perfect for parties, tasters and lunches.
9 eggs, beaten
1 small onion, diced
pinch of Italian mixed herbs
90g of cheddar
12 slices of pepperoni
cooking oil spray
fresh chopped parsley
salt and black pepper
FOR THE PIZZA SAUCE:
3/4 cup of crushed tomatoes (or passata)
2 tbs of tomato paste
1/2 tbs of maple syrup
pinch of dried basil (can use fresh if you have it)
pinch of dried oregano
1/4 tsp of garlic powder
1/4 tsp of onion powder
Spray a frying pan over a medium high heat with cooking oil spray
Add the onion and pinch of mixed Italian herbs and fry for 5 minutes until softened and lightly golden.
Remove from heat and set aside.
Preheat oven to 200c/400f/gas mark 6 (fan oven 180c)
Whisk 9 eggs with a pinch of salt and black pepper
Fold the cooked onion into the egg mixture.
Line a 12 space muffin tray with squares of parchment paper (this is optional).
Spoon the egg mixture into the muffin spaces.
Place the muffin tray in the oven and bake for 15 minutes until the eggs are just set.
While eggs are cooking.
Add the crushed tomatoes, tomato paste, maple syrup, basil, oregano, garlic and onion powder to a bowl and whisk to combine.
Once eggs have baked for 15 minutes, remove from oven.
Spoon 1/2 tbs of the tomato mixture to the top of each egg bite.
Top with cheddar and 1 slice of pepperoni.
Place back in the oven and baked for another 10 minutes until the cheese is melted on top and golden.
Remove from oven and sprinkle with fresh parsley.
