To Make this Recipe You need The following ingredients:
INGREDIENTS:
1 onion, finely chopped
2 cloves of garlic, crushed
350g of zucchini, chopped
300g of English peas
3.5 cups (840ml) of chicken stock (broth)
salt and pepper to season
pinch of dried Thyme
Spray oil
Fresh chopped parsley
Parmesan grated – (from HEa)
INSTRUCTIONS:
Spray a deep soup to with some spray oil
Add the onion and garlic and fry for 5 mins to soften.
Add in the zucchini, peas, thyme, stock and bring to a boil.
Reduce heat and simmer for 20 minutes, then add to a blender and blend till smooth or you can use a stick immersion blender.
Season as needed with salt and black pepper.
Sprinkle with some fresh chopped parsley and add a little grated parmesan from your HEa (optional).
Instant Pot
Set to saute mode
Spray with spray oil
Add onion and garlic and fry for 5 mins to soften.
Add in the zucchini, peas, thyme, stock and add the lid, close valve and set to 5 mins high pressure.
Once it has finished cooking time, do a quick pressure release.
Blend in a blender or with an immersion stick blender until smooth.
Season as needed with salt and black pepper.
Sprinkle with some fresh chopped parsley and add a little grated parmesan from your HEa (optional).
